Our Little Story

Our journey began with a desperate need for amazing, local coffee in Junction, TX. Junction is a small town nestled in the hill country of Central/West Texas with thriving rivers that cut through her valley. Gorgeous views are easily accessible by foot or by kayak but coffee was nowhere to be found unless you opted to chug a cup of what is served in a gas station. There was a great need for a perfect cup of coffee in this little town. My happy place is a long walk with a latte in hand and a pup by my side. I needed this little oasis in the desert just as much as this town did. So I made it with tremendous help from my sister and mom who also live in Junction (they continue to supply the perfect, homemade baked goods you find in our window every day).

I built our brand around a sustainable platform. We only use “plastic” cold cups created from plant fiber, straws crafted from corn starch or hay, 100% compostable hot cups and 100% compostable lids. I wanted to pair our environmentally conscious exterior with an equally impressive interior. We only source natural and organic syrups, fair-trade organic coffee beans, and Texas dairy products. We recycle everything that does not compost down and we will not slacken our mission to minimize our waste. We are surrounded by breathtaking land, rivers, and clean Texas air and we will not be a source of contamination.

We Started small…

I opened the trailer doors for the first time in October of 2019 in a little turquoise trailer that was held together by love and good intentions. With the overwhelming support that Junction poured upon this little business, it became clear that I would need to expand quickly. In February of 2020 I opened our beautiful, red windows on The Honey Bean Coffee and Tea Company and continued to rapidly improve our coffee, technique, and skill. In March of 2020 I hired two talented baristas and the me became a team! In June of 2020, in the hurls of the Pandemic, I wanted to find a way to draw the community safely together. We needed each other in this terrifying time in history but we had to do so ever so carefully. I sponsored and created the Junction Area Farmers Market that was hosted outdoors in the Junction City Park right along the Llano River. Oh, what a joy it was to behold! We picked up our wheels each Saturday and served coffee, tea, and pastries to the locals while surrounded by like-minded vendors under the shade trees of Junction. We will continue to sponsor, support, and create Farmers Markets in the surrounding areas.

So if you are ever passing through Junction, stop on by and sip a cup of coffee with us. In the meantime, if you are missing our smooth taste of happiness, order yourself a bag of coffee, maybe a mug, or perhaps a shirt and think of us. Until we see you again, be kind to each other.
